Potato Broccoli Soup


A nutritious vegetable soup that will leave you feeling full + healthy. Not to mention this soup can be made in #30minutes!

This recipe was adapted from #thugkitchen 101 cookbook. My kind of #cookbook! If anyone knows me, they know I can be vulgar. Haha! Thug kitchen follows my beliefs of #quick, #healthy, + #easy cooking but with a mix of swear words + dirty jokes tossed in. I love it!

It is all vegan based but simple ingredients + not complicated to make. By cutting down on meat in your diet, you are helping bring down #inflammation in your body. This means, more energy, quicker recovery from workouts, absorb nutrients properly, + your digestive system will thank you later. Trust me! :)

Get creative! Add or remove whatever vegetables/spices you have or prefer!

Potato Broccoli Soup (serves 4-6)

Whats in it:

  • 1 tbsp olive oil

  • 2 crowns of broccoli cut up

  • 1 onion diced

  • 4 lbs potatoes diced

  • 4 celery stalks diced

  • 6 garlic cloves minced

  • 6 cups of vegetable broth

  • 1 tsp grated lemon zest

  • 4 tbsp of lemon juice

  • 2 cups of nutritional yeast (nooch)

  • 4 stalks of green onion chopped

  • Salt + pepper to taste

How to cook it:

1. On medium heat warm up the oil in a big pot then add onions, garlic, celery, + saute till soft

2. Add the broccoli, potatoes, broth, salt, + pepper to the pot, bring to a boil + cook till the vegetables are soft

3. Add in the lemon zest, lemon juice, + nutritional yeast

4. Using an immersion blender or take some soup out of the pot into a blender + then puree however much soup you want to make the desired thickness you prefer

5. Stir in the green onions
